recipe: paleo tropical applesauce
Ok, it doesn’t look like much, but it tastes great!
INGREDIENTS:
-2 organic apples, any variety (I used McIntosh)
-1 organic mango
-1/2 tsp raw organic honey
-cinnamon to tasteGet a pot of water on the stove & bring to a boil. Meanwhile, peel & chop the apples & mango.
Carefully add them to the boiling water, reduce heat, & simmer for 25 minutes.
Strain, add to a bowl, & mash with the back of a spoon. Add the honey; it will melt into the hot fruits easily. Stir well. Add cinnamon to taste.Easy as pie! :)

Quick Pumpkin Muffin (made this yesterday, forgot to post)
Again, a little excited over my recent purchase of coconut flour. I had high hopes for this recipe, imagining actual cake-like texture but it was far too moist for that. This recipe is for an individual microwaveable muffin but I don’t have a microwave so I doubled the ingredients and baked in a 9” round pan. The taste was good, not great. It probably would have tasted better with more stevia but I don’t like adding very much sweetener so I might play with other ingredients for a better taste.

she e-mailed me back saying to go to her office at 2pm. i wonder what that means. i really freaking hope she’ll let me take it. i suck!!!!!!
however, at the bottom of her e-mail she had a quote and it read:
